What better way to start off Monday than with a healthified dessert recipe! This is my favorite dessert recipe and I’ve had it in constant rotation during this pregnancy. I haven’t had any crazy pregnancy cravings but I can’t seem to eat enough avocados and chocolate foods. This healthy black bean recipe helps curb the chocolate cravings.
Black Bean Brownies
Prep Time: 10 minutes
Cook Time: 25-30 minutes

- 1 can of black beans (rinsed & drained)
- 3 eggs
- 1/2 cup of cocoa powder
- 1/2 cup of almond flour
- 1/2 cup of sugar
- 4 tbsp coconut oil
- 1 tsp of vanilla extract
- 1/4 cup of water
- dark chocolate chips
- 1 tbsp coconut oil for greasing pan
Add all the ingredients (except the chocolate chips) into a blender until fully blended. Grease a 9×12 pan with coconut oil. Pour batter into pan. Add chocolate chips to batter in pan. Bake at 350° for 25-30 minutes.
ENJOY! I like to warm my brownies in the microwave for about 10 seconds and then serve with vanilla ice cream.
