One of my go-to lunches is a salad loaded with lots of toppings. It is always a great lunch to carry to work and no need for a microwave to heat anything up. Yesterday, my salad was more of a “clean out the refrigerator” salad before our camping trip & trip back to North Carolina. Over a bed of spinach, I added a hard boiled eggs, carrots, cucumber, cherry tomatoes, black beans, broccoli, corn and an avocado. I topped it off with my homemade ranch dressing which I plan to share on here soon!
