Zucchini “Pasta”

This zucchini “pasta” with lemon & avocado dressing is one of my favorite meals. It’s quick and easy to make, refreshing and super healthy. I love the lemon avacado & basil dressing so much I use as dressings on salads.

In case you have never used a Spiralizer®, they are easy to use. I would recommend the Veggetti for only around $11.00 on Amazon and it doesn’t take up much storage room. Every square inch of space is important when you live in less than 500 sq ft!

Zucchini Pasta + Lemon Avocado Dressing

Prep Time: 25 minutes

Ingredients (2 servings)

    For the Zucchini Pasta

    • 2 small to medium zucchini squash
    • handful of cherry tomatoes (cut in half)
    • 1/4 jalapeno, de-seeded, thinly sliced (optional)
    • Handful of mixed greens
    • A dash of salt and pepper to taste

    For the Dressing

    • 1 avocado, diced
    • 1 organic cucumber (peel and cut into chunks)
    • 3-4 medium to large organic basil leaves
    • 1 clove garlic
    • Juice of 1 lemon
    • A dash of salt and pepper

    Instructions

    For the Zucchini Pasta

    Use a spiralizer or Veggetti (can order off Amazon for only around $11.00 — see link in blog post) to make pasta out of the zucchini. Combine the zucchini pasta with the dressing (recipe below). Add the cherry tomatoes, mixed greens and jalapeño. Enjoy! Depending on how saucy you want the pasta, add the dressing slowly and you might end up with some extra dressing to use on other salads.

    For the Dressing

    Combine all ingredients into a blender or food processor until smooth and creamy.

    Weekend Recap: New Beginnings

    “There are no endings, only new beginnings”

    It was a packed weekend for me.  On Sunday, I finished an intensive 4 month classical pilates teacher certification course. Minus the fact I have to wait and test out on some of the technique portion since I’m 31 weeks pregnant, the teaching & written assessments are now completed! I plan to do a more in depth post about my Pilates training experience later.  I am excited, thankful and feel inspired that I am on the path to creating a career in fitness. This is only the beginning & thankful to have shared the process and learned so much from our teacher and the other students in my training.

    Friday night after Pilates, we headed out to Seattle Tennis Club to watch some tennis. It was a packed house with some former pro players playing in exhibition matches. Ryan has worked here since we moved out to Seattle and he is planning to continue teaching on Sundays in addition to working at his new legal job. The club is located right on Lake Washington with amazing views. It was quite the happening place on Friday night.

    Saturday night, we went over to our friends Scott & Courtney’s place to watch the Sounders game.

    Ryan and I finished our weekend Sunday afternoon at Madison Park Beach. Only about 5 minutes from our house, it was nice to relax by the water to finish off the weekend.

    I am now recovering from the packed weekend but super excited to have Level 1 Pilates training behind me and thankful for the fun time I was able to sneak in this weekend with Ryan and friends.

    Pilates Filled Weekend

    Happy Friday! Of course it’s another gorgeous weekend here in Seattle and I will be inside for most it finishing up the last weekend of Level 1 Pilates training. I am a little sad I don’t get to spend it with Ryan on his last free weekend before he starts his new legal job Monday. Congratulations to my hottie of a hubby!!

    My other thought/workout tip of the day is workout partners. I have never been a person to workout alone. It is always more fun when you have another to keep you accountable and make it more of a social event. Go out for a healthy snack or meal after the workout and really make it into a girls night!

    Mexican Nights

    One thing is for sure – Ryan and I will never turn down a meal at a Mexican restaurant. We decided to stay in the neighborhood tonight for dinner and went to Mezcaleria Oaxaca. They have a rooftop and we were planning to eat up there but once we got there and checked it out, we opted for the quieter downstairs dining area by an open window.  Overall, the food was good and the restaurant had a great atmosphere.

    I am missing North Carolina a little today. I am missing the boat rides, vaca vibes & having my mom cook every meal. Something about spending time on the water — at Ocean Isle Beach & then Lake Norman makes me realize I will always have to live near water.

    It’s a good thing we are surrounded by water here in Seattle and you can drive 10 minutes anyway and be at some body of water. Since I will be in my last weekend of Level 1 Pilates training this weekend & I’m teaching a class tomorrow evening, Ryan & I are going to go out for dinner tonight. I can’t decide if we should eat somewhere on a rooftop in our neighborhood (Capitol Hill) or venture out to explore an area we might potentially move to. I think a water view is top on my list today.

    Energy Balls Recipe

    When I was working at Belk, the last year I was there they started to focus on getting the employees to engage in living a healthy lifestyle. They hired Brooke Thomas of www.360yourlife.com to come speak in a series on healthy living. Brooke is a Certified Nutritional Consultant and has an interesting story about her road to healthy living. She was diagnosed with cancer during her first pregnancy and it changed her outlook on eating. I got the privilege of sitting through a few of her lectures while I was employed at Belk. Two of my other office co-workers and I would always arrive super early to her lectures so we could sit front and center. We didn’t want to risk the chance of not getting the free bag of goodies (I’m talking a big bag of healthy snacks-locally sourced when possible-and loaded with coupons). We looked forward to her lectures & I can’t say enough great things about the recipes of hers I have added to my rotations of healthy go-to meals & snacks.

    The first recipe from Brooke I tried was Energy Balls (slightly adapted from her Energy Bites). These have become a staple in my life. They are great for a healthy sweet snack on the go! I take them on hiking trips, breakfast on the go & pack when traveling on a road trip or flying. When our refrigerator is empty of energy balls, Ryan always asks when I plan to make them again.  Hope you enjoy these as much as we do!

    Ingredients

    • 1 cup of oats
    • 1/2 cup of almond butter (I sometimes substitute with peanut butter)
    • 1/3 cup of honey
    • 1/2 cup of dark chocolate chips
    • 1 tsp vanilla extract
    • 1/2 cup of flaxseed meal

    Instructions

    1. Mix all ingredients in bowl evenly. Roll into 1 inch balls and place on baking sheet or plate in the refrigerator for 1-2 hours.

    2. Enjoy!!!

    I keep mine refrigerated & think they taste better when cold.

    Weekend Recap: Low Key in Seattle

    After being away for two weeks, it was nice to be sleeping in our bed and spend some time catching up on our life here. Our weekend was pretty uneventful. I started Friday off with a personal Pilates session and spent the morning & early afternoon attempting to learn human anatomy for my testing next weekend. Not sure if it is my pregnancy brain but I can’t seem to retain any information right now. Friday afternoon, I had my 30 weeks doctor appointment. My favorite part of doctor appointments is getting to hear the heartbeat — I tear up almost every time.

    We grilled chicken on our rooftop Friday evening. It was cloudy and in the low 70s that evening so we had to rooftop basically to ourselves. It has been sunshine and in the 80s/90s here in Seattle for the past few weeks.

    Saturday, we spent the day riding to some open houses and exploring potential areas we are thinking to move to next. I made enchiladas for dinner Saturday night & settled in with catching up on Orange is the New Black season 3.

    Sunday, I spent time studying more anatomy and concepts for my testings then taught a class early evening. Since it was such a nice evening when I got back, we ate leftovers and walked down the street to get some frozen yogurt to end the weekend.

    Last Day at the Lake

    As I sit at the airport waiting for our flight back to Seattle, I can’t help but get a little sad to leave North Carolina this time. Don’t get me wrong, I am excited to get back to sleeping in my own bed and can’t wait to pick up Sumo tomorrow morning at the kennel. I’m pretty sure Ryan and I watched him on the dog cam for a good hour today when we got to the airport. I had a great two weeks catching up with family and friends in North Carolina but I think I’m more sad this time because I don’t know when we will be back again.

    I spent my last day painting some canvases for our future nursery (that we don’t have). Right now we live in a glorified studio open one bedroom apartment with about 500 sq ft. Our lease is up in September so we have started to look for places to live but not sure what our living situation is going to be but I still wanted to make some paintings. My best friend and her two little ones came up to spend the day with us paddle boarding and playing on the lake one last time.

    Weekend Recap: 4th of July

    Monday morning blues from North Carolina. I am at the lake for 2 more days so trying to enjoy the last of my time in North Carolina before heading back to Seattle. The past few days have consisted mostly of spending time with family, eating and enjoying the lake activities. Sad to have to say goodbye to all my friends & family but excited to get back and start working towards some things I have in the mix. After my vacation in North Carolina, I feel re-energized & inspired.

    Sunday afternoon, I headed to Davie County (yes I grew up in a place where I say the county and not the town I’m from) and my high school friends hosted a baby shower for Logan. I’m thankful to have grown up with these girls and glad to still be so close to them today.
