Hiking: Enchantments // Stuart Lake

First backpacking trip was a success! Our neighbor told us about the Enchantments in the Cascade mountains and we were quickly convinced to sign up for the lottery to get a camping permit this summer. Thankfully, Ryan did a good job picking the Stuart Zone for the lottery camping permit even though we didn’t exactly do our research before chosing. Being 6 months pregnant, I don’t think I could have made the hike up through Aasguard Pass carrying camping equipment. The Whole Core Enchantment Loop is 19 miles with a 6000 ft elevation gain and another 7800 ft elevation loss. This is on my list of hikes post pregnancy.

We were excited we got an overnight camping permit in the Stuart Lake Zone & what a weekend it was with our crew of 8!  It was my first time carrying camping equipment over 4 miles to a campsite, first time eating dehydrated food (there is a fire ban in this area), first time filtering water from a lake to drink and first time camping out in the alpine wilderness.

We left Friday night and and stayed in a hotel outside of Leavenworth so we could get an early start Saturday morning. We got up at 7am and drove to the trailhead. Four miles of the drive was on a roller coaster dirt road filled with potholes. We finally got our hike started around 8:30am. The hike was strenuous but not overly difficult with a 1600 ft elevation gain over 4.6 miles. I had to take more breaks than I normally would have being 6 months pregnant. I have to give a huge thanks to my husband who carried all our heavy gear (tent, sleeping bags & whatever else we could fit in his huge 3 liter backpack). I borrowed a friend’s day backpack which was much smaller but we still packed it full of what we could.

The first 2 miles of the hike was the hardest with some steep inclines and a rocky terrain. At about the half way point when the Stuart Lake trail breaks off from the Colchuck lake trail, the trail levels out. The rest of the hike was mostly through the forest with a few breaks of meadows. The meadows offered amazing views of Mount Stuart & the surrounding mountains.

Once we got to our campsite, we set up our tents & spent the rest of the day relaxing by the lake and exploring around the campsite.  We did a lot of talking on the big rocks overlooking the lake.  Hands down, best day I have had in a long time!

It was so nice to be out in the solitude of the wilderness and only feel like there were 8 other people in the world.  Being out in the mountains here in the Pacific Northwest re-invigorates me and helps me take a step back from the hustle & bustle of everyday life.   I come home from trips & hikes like these feeling inspired and ready to take on the life I want to live and create for myself.

Saturdaze

Another beach day & another relaxing day. I am officially 28 weeks today & in the third trimester. Crazy to believe only 12 more weeks to go.  I am still feeling the vaca vibe so my workout today only consisted of walking and some Pilates stretching on the beach.

Planning to end the night with a little Pilates studying & another episode of Orange is the New Black.

Beach Days

It’s been a couple days but I think I am still recovering from the backpacking trip from last weekend.  I haven’t worked out at all this week and decided to give my body a break on this vacation. My day today consisted of the beach, resting & eating.  I plan to start up pilates with a little cardio tomorrow — we will see if that actually happens after a day on the beach.  Regardless if I start working out or not, my mom will be taking mat classes from me everyday starting tomorrow till I leave so I hope she is ready!

Nothing beats ending the day sitting on the dock staying entertained by your 2-year old nephew.

Off to Carolina

I couldn’t be more excited to be back in the Carolinas for 2 weeks! First stop was in Conway, SC to visit with my brother last night.   My adorable nephew is now 2 years old and couldn’t be a cuter blonde haired, blue-eyed little stud.  Today we came to my parents beach house in Ocean Isle, NC and will be here till next Tuesday.  I am excited for all the beach time & cooking that will take place over the next week.

I have been craving fresh tomatoes and South Carolina peaches for a few weeks now & I finally got my fix today. It was worth the wait!  We stopped at Holden’s Market on the way to the beach house and stocked up on fresh produce, local honey & homemade pimento cheese.

Going off the Grid

Gearing up for a weekend off the grid & couldn’t be more excited.  We are headed out for a camping trip in the Cascades this weekend.  It will be my first backpacking camping trip.  I’m sure at 6 months pregnant and the entertaining group we are going with, I will have some good stories & memories from this trip.

My Go-To Fast Food

One of my go-to lunches is a salad loaded with lots of toppings.  It is always a great lunch to carry to work and no need for a microwave to heat anything up.  Yesterday, my salad was more of a “clean out the refrigerator” salad before our camping trip & trip back to North Carolina.  Over a bed of spinach, I added a hard boiled eggs, carrots, cucumber, cherry tomatoes, black beans, broccoli, corn and an avocado.  I topped it off with my homemade ranch dressing which I plan to share on here soon!

A few shots before dinner in the desert on our recent trip to Tucson, Arizona for our best friends Jen & James’ wedding.  Ryan & I flew out a few days earlier to enjoy a few days at the Westin La Paloma.  We were off to meet a group of friends for dinner & drinks (well some mocktails for me) at Guadalajara Grill. I have missed that table side salsa at one of our favorite restaurants in Tucson.  At 24 weeks, I am trying to avoid buying maternity clothes so using the bellaband (link on shop page under fashion category to purchase off Amazon) for all my shorts & pants for now.

Thoughts on Maple Water

The latest natural beverage trend buzzing around is maple water. I finally tried for the first time a few weeks ago.

Maple water is the water coming straight from the maple tree. When reduced over heat, it is the same thing you put on your pancakes — maple syrup. My breakdown on maple water is below:

THE CLAIM: Maple water has a long list of claimed benefits including being full of electrolytes, low in natural sugars, bone strengthening & anti-inflammatory benefits and antioxidant benefits.

THE TRUTH: Some research shows that maple syrup itself does have health benefits but maple water is so new to the market that there isn’t much research to back up the long list of health claims. According to Kiki Maple Sweet Water, a maple water provider in Canada, maple water has more than 80 micronutrients including potassium, magnesium, calcium, iron, zinc, choline, selenium and B vitamins.

MY THOUGHTS: I like it and think it tastes better than coconut water — the maple taste is very subtle when you drink it. It is a much better alternative to drinking a soda! It’s very low in calories and has half the sugar content of coconut water. I will continue to drink maple water but it’s not a daily must have beverage like my green juice.

Weekend Recap: Alki Beach

Since we moved to the Pacific Northwest, everyone has kept telling us “just wait till summer.” Although not officially summer, the weather has been glorious for the past few weeks. Being right on the water, the temperatures never get too hot and unlike what everyone says about Seattle, it hasn’t rained in days. Add that to longer days with it staying light outside till 10 or later, I don’t want to go to sleep at all!

Friday night we had a relaxing night rooftop grilling and sitting by the fire pits. Saturday was a our beach day at Alki Beach in West Seattle. Only about a 20 minute car ride away, Alki Beach is public beach complete with sand volleyball courts, fire pits for grilling, restaurants, coffee shops & amazing people watching.

The water was frigid – not the warm Atlantic off the coast of North Carolina I’m used to in the summer but there was really no need to go in the water to cool off.  The temperatures were in the 70s with a nice breeze.

After the beach, we went to one of the restaurants off the boardwalk.  Burgers and Fish & Chips all around.  Next stop before heading home was the ice cream shop!
