Deciding What I Want to Be

I was planning to share my crockpot recipe from last night but I am not happy with how it turned out so I plan to make a few tweaks and try it out again before sharing.

Instead, I’m just sharing some of my Thursday feelings. Goodbye corporate America! I am finally making the biggest step towards my long-term goals. After over 6 years in corporate retail, I am moving on to new ventures.  I started my Pilates certification through Peak Pilates and will also be working for my best friend Roxy helping build her empire of bar carts and furniture at Society Social! Fitness has always been a huge passion of mine & I’m not sure why I’ve waited this long to make the jump to get certified in something fitness related.  I also couldn’t be more honored to work for Roxy. We worked together in a buying office our first job out of college. She was brave enough to follow her dreams a few years later and it’s been inspiring to see her build her brand over the past few years.

When you work in a corporate setting, not only is it challenging to find the time to plan and make healthy meals but it can be hard to remember to set aside time for yourself. We only have one life, so make sure you make the time for the things you love to do. If that is going to a nice dinner, treat yourself. If it’s working out, find the time to take a fitness class or get to the gym.  When I lived in Charlotte, it was a Wednesday night yoga class with Kyle Conti that really changed my outlook on not just yoga but life.  I was so hooked on his class, my friend Shayna and I made it a date every Wednesday night. Then we would meet up with the boys after for dinner. I miss Kyle and the community at Charlotte Yoga. I can honestly say it was his words that have helped guide me where I am today.

Turning 30

Today is my 30th birthday.  It’s crazy how old and far away 30 seems when you are 18 and graduating from high school.

As I reflect on my 20s, the biggest piece of advice I have for someone turning 30 is that you don’t have to have it all figured out. It might have taken me a few years to realize this but this thing we call life is a moving and changing situation.  There is no right or wrong path or timeline of how long it should take you to accomplish a goal professionally or personally.

I accomplished more than I realize in my 20s. I graduated from college, landed a job in retail buying, bought a townhome, moved to Arizona to follow my husband, tried out another career in pharmaceuticals, moved back to North Carolina & now we find ourselves living another adventure in Seattle, Washington expecting our first baby in September.  More important than all of that, I have made some incredible friends & have had supportive family along the way that have inspired me in different ways. I’ve had the chance to learn from each of them.

I am certainly not where I thought I would be when I turned 30.

Sip & Feel Better: Drink more water

Drinking enough water daily can be hard.  I would say 9 out of 10 times I have a headache or feel sluggish during the day, I can attribute it to not drinking enough water. It can be hard to count the number of glasses of water you drink or number of times you fill up a water bottle.  I decided to invest in a larger BPA-free pink mini jug to keep me accountable for the water I drink.  It holds 64 oz and my goal is to drink 2 of these each day.  Just a few of the benefits of drinking water: increases energy & reduces fatigue, flushes out toxins, help maintain regularity & most importantly boosts your mood.

My Daily Water Drinking Guidelines

  • Drink a glass of water first thing when you wake up.
  • Always have a filled water bottle in your purse or with you at all times.
  • Drink half your bodyweight in ounces of water (if you weight 140lbs, drink 70 oz of water each day).
  • When I get tired of drinking just water, I’ll add some berries, lemon or sliced cucumber to mix it up.

Whether it’s a cute water bottle or something to measure your daily intake, find what keeps you on track to drink the water your body needs each day. Weekend Recap: Mariners Game

Another weekend comes to an end. Friday night, we drove out to Bellevue to eat at our favorite Mexican restaurant to celebrate Ryan passing the bar and being sworn in on Thursday. Saturday, we slept in a little and then started our day off by walking down to Pioneer’s Square. We spent the afternoon eating and drinking at the German bar Altstadt. Around 4, we left to walk over to our first Mariner’s game. We wanted to be one of the first 25,000 fans so we could get a free bear hat. It was kuma bear hat night at the Mariners game and thankfully the hats kept us a little warmer at the game. It was cold & we weren’t exactly dressed for the cold temps so after the game, I couldn’t wait to get somewhere warm. We stopped at the hotel bar, Bookstore. It was a round of Irish coffees for everyone else & a hot chocolate for me.

After indulging in not so healthy food Friday & Saturday, I decided Sunday it was back to clean eating and spent most of the day in the kitchen.

Seattle: Fremont Sunday Market

A Sunday well spent. I ventured out to explore some of Fremont with Helena. We met at the Milstead & Co. coffee shop and indulged in a delicious dark chocolate iced mocha.  Next, we headed to the Fremont Sunday market. I am already counting down till I get to go back. This market is one of Seattle’s longest running markets and features 200+ vendors offering crafts, antiques, fashion, food and more. This market was more a craft market than a food/farmer’s market which was a nice change. I would highly recommend this market for out of town visitors. For more information check out their link: Fremont Market.  My market purchases included a necklace, Mariners tank & the best smelling candle from local vendors. I grabbed a slice of pizza at the market and Helena had an Afghan bowl. Both of us made good food choices.

After our time at the market, we walked around and visited some of the surrounding boutiques in Fremont. When I got home, Ryan and I ended the day sitting on the rooftop with Sumo soaking in the last of the weekend sunshine.

Closed Doors

Thankful for closed doors and new beginnings in Seattle! Lot’s of changes going on in my life right now. Although scary with lots of unknowns, I couldn’t feel more at peace with where I am in life.  Started my morning off taking a much needed yoga class from my friend Leslie at Lab5. She was the first person I met when I moved to Seattle & we exchanged numbers at the mall.  I had not seen her in a few months so it was great to take her class & catch up this morning. Excited to share one of my new beginnings in getting certified in Pilates.

Hot Springs Trail

A couple of weeks ago, we ventured out for a hike for Helena’s birthday in the Olympic Mountains. The trail was called Hot Springs and left from the the Appleton Pass Trailhead outside of Port Angeles. From Seattle, we took the ferry to Bainbridge Island, then drove another 2.5 hours on the 101. The drive was long but the trail was worth it. It was a beginner trial and only a 2 mile hike to reach the hot springs. It was cold that day (I’d say 40s) but the girls I went with took bathing suits and enjoyed the hot springs treat at the end of hike. Since I’m pregnant, I decided it was best only sticking my feet into the pools. For the most part, we had the pools (there were multiple pools) to ourselves except for the nude couple sharing a pool with us. Minus this awkward newly dating nude couple that I don’t think was ever leaving, the hot springs experience was awesome. There is something peaceful about being tucked away in the mountains in the Pacific Northwest with almost no people in sight sitting in a hot springs.

Chocolate Delight Smoothie

Now that Ryan is away for the weekend, I can live off smoothies, juices & only vegetables for a few days.

I have never had a sweet tooth but this pregnancy has me craving things I don’t normally crave. It seems everyday I want something chocolate tasting and this smoothie gives me exactly what I’m craving in a healthy recipe.

CHOCOLATE DELIGHT SMOOTHIE

Ingredients

  • 1 banana
  • 1 cup almond milk
  • 3 tablespoons almond butter
  • 2 tablespoons cacao powder
  • handful of ice cubes

Add all ingredients to a blender and mix well. Pour into a glass and enjoy this healthy sweet treat!

Cacao powder benefits: Adds a powerful punch of radical fighting antioxidants, iron, magnesium & fiber.

Sloppy Joes

The last time I ate (or should I say tried to eat) a Sloppy Joe was on the way back from hiking in the Olympic Mountains for Helena’s birthday a few weeks ago.  We were driving through a part of Washington where the restaurant choices were limited and ended up stopping at one of the only restaurant options for the next 2 hours. The Yelp reviews were bad but we remained positive the food could still be good.  Once my Sloppy Joe (I think it was a Sloppy Tom there) arrived, I was pretty certain they had accidentally served me Sumo’s dog food over a bun. I only ate the fries and have longed for a good Sloppy Joe since that day.

Growing up in the South, I am always in the mood for any kind of comfort food.  Ryan was leaving me for a bachelor party in Vegas for the weekend, so I decided to cook one more meal before he left.   Ryan gets tired of my vegetables and lack of meat in meals so I felt this was a perfect send off meal for him.  Sloppy Joes served with mac & cheese (simple truth organic white cheddar).

SLOPPY JOES (recipe adapted from the Neelys)

Ingredients

  • 1 tablespoon olive oil
  • 1 green bell pepper, chopped
  • 1/2 vidalia onion, chopped
  • 2 garlic gloves, minced
  • 1 teaspoon salt
  • 1 teaspoon freshly ground pepper
  • 1 lb lean ground beef
  • 8 oz tomato sauce (used simple truth organic)
  • 3 tablespoons tomato paste (used simple truth organic)
  • 1 cup BBQ sauce (used a Local BBQ sauce called Biff’s Blue Ribbon)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon hot sauce (used Texas Pete)
  • 2 tablespoon ketchup (used simple truth organic)
  • Hawaiian Sweet Rolls

1. Heat oil in a large skillet. Add the bell peppers and garlic. Saute until tender, about 3 minutes. Season with salt and pepper.

2. Add the ground beef to the vegetables. Stir and cook about 8 minutes, until the meat is no longer pink and fully cooked.

3. Add tomato sauce, tomato paste, barbecue sauce, Worcestershire, and hot sauce into the skillet. Stir. Simmer until thickened, about 10 minutes. Serve on hamburger bun with extra sauce.

The Neelys recipe called for 2 lbs of meat but I liked using only 1 lb of meat and the Sloppy Joes were more saucy. Next time, I plan to experiment with different BBQ sauces to see how the flavor changes.
