Chocolate Chip Banana Pancakes

The days are flying by.  I am learning to operate on less than 8 hours of sleep these days. Never did I think that would be possible. The longest span of sleep I have had since Logan was born is 3 hours. However, I have never slept better during a 1, 2 or 3 hour stretch as I do now.  Tonight, we are having breakfast for dinner since my body doesn’t know the difference in days and nights anymore.

We ventured out with Logan to go watch Ryan’s tennis match Saturday night. He was all ready to cheer on Daddy!

We might only live in a 500 sq ft apartment but our view makes up for the lack of space we are currently living in. Waking up to feed Logan in the middle of the night isn’t too bad when I can sit and look at this view.

Sharing my go to chocolate chip banana pancake recipe. The recipe below makes 4 pancakes so I normally double or triple the recipe. If I have leftovers, I eat them as snacks.

Chocolate Chip Banana Pancakes

Prep Time: 5 mins

Cook Time: 12 mins

Ingredients (4 pancakes)

  • 1 banana
  • 2 eggs
  • 1/4 cup almond flour
  • 1/2 tsp vanilla extract
  • 1 tbsp flaxseed meal
  • 1 tsp coconut oil (to grease pan)
  • 1/2 cup chocolate chips

Instructions

In a mixing bowl, beat eggs. Add bananas and use fork to smash and mix in with eggs. Mix in almond flour, vanilla extract and flaxseed meal. Melt coconut oil in pan on medium heat. Scoop pancake mixture onto pan and cook 3 minutes on each side. After first flip, add in desired amount of chocolate chips into pancake mixture. Enjoy!
